Loch Ewe Distillery


The new distillery is the brainchild of John Clotworthy who, as well as being the proprietor of the Drumchork Hotel in Aultbea, is a Scottish Licensed Trade Association Whisky Ambassador. John's dream has come true - he has transformed a garage behind his hotel into a 'distillery in a cave'.

"It will not be whisky because by law you cannot call it whisky until it is three years old. It will be the Uisge Beatha or Aqua Vitae. Everyone in the bar will get a taste but I'm having the first one. Definitely."

John has used an ancient method for the design of his still. "We are using an alembic pot still which was used by the ancient Egyptians to produce perfumes and aromas as far back as 200BC. Around 200AD European monks were using this design of still to make pot ales and their fortified wines. That's where the Aqua Vitae, the water of life, comes from. Although based on an ancient still it's all new and we are not sure just how much whisky will be produced. Next week, we will be producing the Spirit of Loch Ewe and the whisky will be ready in five years."

The new whisky will be called Loch Ewe Single Malt. The Drumchork Hotel is officially the Top Whisky Hotel in the world and has also won Top Whisky Bar in Scotland several times with its 700 single malts on the gantry.
